5-6 peeled whole garlic cloves
1 large sweet onion cut into chunks
1/4 cup olive oil
4 sprigs fresh thyme
kosher salt and fresh ground pepper
1 Preheat grill.
2. Lay two sheets of heavy duty foil, around 24" long on top of each other and form a bowl.
3. Arrange the potatoes in the center of the bowl. Top the potatoes with the garlic and onion.
4. Drizzle the potatoes with olive oil.
5. Place the thyme on top of the potatoes. Season with salt and pepper, then toss to coat.
6. Seal the foil pouch on the top and sides. Grill for 25-30 minutes over high heat or until the potatoes are fork tender.
7. Carefully open the foil packet and serve immediately.
