Cheesy Brunch Bake: Submitted by: Ed Cook | Date Added: 14 Jun 2011 Ingredients:

1 lb Pork Sausage
1 Onion, chopped
2 Green Peppers, chopped
1/2 cup Salsa
12 oz Velveeta (cut into 1/4" cubes, divided)
1 dz Eggs
1/3 cup Sour Cream

Cooking Instructions:

1. Preheat oven to 350 degrees.
2. Brown sausage, onions, and peppers. Drain and return to pan, then add the salsa and 1/2 of the Velveeta.
3. When melted, put into a greased 9" x 13" pan.
4. In a different bowl, whisk together the eggs and sour cream until blended. Pour over the sausage mixture and top with the remaining Velveeta.
5. Bake for 40 minutes and Enjoy!
